340gm dark cooking chocolate, chopped 50gm butter 1/2 cup sugar 2 eggs 1 tspn vanilla 1/2 tspn salt 2/3 cup plain flourMelt chocolate and butter together in microwave or over hot water, until chocolate is quite melted. Stir in the sugar and blend well. Using a low speed on an electric mixer, beat in the eggs and vanilla. Stir in the salt and flour. Spread this mixture into the bottom of the prepared pan and set aside.
250gm cream cheese, softened 30gm butter 1/2 cup sugar 2 eggs 2 tblsp milk 1 tblsp plain flour 85gm dark cooking chocolate, finely choppedBeat together the cream cheese, butter and sugar until creamy. Beat in eggs, milk and flour. Stir in chopped chocolate. Pour on top of the chocolate base.
Bake at 180°C for approximately 40 minutes (my oven is a bit slow and took 45mins). Cool in the tin completely before turning out and removing baking paper.
Top with a ganache of melted chocolate and butter and allow to set before cutting. Store in the refrigerator is you plan to keep it any length of time.
