Kaye and Geoff's Recipes - Cakes


Triple Chocolate Muffins

275gm plain flour			25gm cocoa
3 tspn baking powder			175gm brown sugar
2 eggs					1 cup milk
75ml vegetable oil			Vanilla essence to taste
Lemon essence to taste			50gm dark chocolate, grated
50gm milk chocolate, grated		50gm white chocolate, grated
Sift together flour, cocoa, baking powder and a pinch of salt. Stir in sugar. Whisk together eggs, milk, oil and a few drops of each of the essences and stir into the dry ingredients. Fold in grated chocolates until mixed thoroughly (do not overmix - the mixture should still be slightly lumpy).

Spoon into buttered muffin pans and bake at 180°C for 18 minutes or until cooked when tested with a skewer. Stan in pans for 5 minutes before turning out on a wire rack to cool.
