Free Kirk Pudding

8 tablespoons flour			8 tablespoons breadcrumbs
60 gms butter				1 large cooking apple
6 tablespoons mixed dried fruit		2 teaspoons mixed spice
4 tablespoons sugar			1 teaspoon bicarb soda
240 ml milk

Mix the flour and breadcrumbs and rub in the butter. Chop the apple, unpeeled, into 1cm pieces, and mix it with the other fruit, spices and sugar in with the flour and crumbs. Disolve the bicarbonate in a little of the milk and thoroughly stir it into the fruit mixture. Then mix in enough milk to make a slack dough.

Put the mixture into a pudding bowl. Cover the bowl with a piece of foil, leaving a pleat for expansion in the centre, and tie it down securely with string. Steam for at least 2 hours. If doing this in a saucepan, the water should be about half way up the bowl and kept at a light simmer.
