Kaye and Geoff's Recipes - Sauces


Sweet chilli sauce

1.5 kg tomatoes			20 red chillies (with seads left in)
4 large cloves garlic		2 very large knobs ginger
4 small white onions		1.5 cups white cider vinegar
1 cup white sugar
Skin and chop the tomatoes. Chop onions, garlic, ginger. Combine all ingredients in a heavy-bottomed saucepan and heat over a low heat, stirring continuously with a wooden spoon until boiling. Simmer until you think they are done. Cool and purree in blender. Reheat to boiling, then bottle into sterilized, heated bottles
